Coffee processing for this lot takes place at Frinsa Estate, where the wet mill sits at 1,400 meters above sea level. The estate is equipped with a well-ventilated storage facility and a dry mill, enabling precise control over each stage of production—from harvesting to grading, sorting, and final preparation for export. The Frinsa team brings deep processing expertise and skilfully navigates local climate challenges to produce coffees with clean, transparent flavour profiles. This lot is composed of local Indonesian heirloom varieties, including Ateng Super, P88, and Borbor. Cherries are selectively handpicked and sorted using flotation tanks to separate underripe fruit from perfectly ripe cherries. They then undergo a controlled 96-hour fermentation with Lactobacillus cerevisiae, during which water is added to maintain ideal conditions. After fermentation, the cherries are removed and slowly dried before entering the milling stage. Wildan has named this lot “Edun”, meaning “crazy” in Bahasa—his designation for anaerobic natural lots with vibrant, playful character. This coffee is produced by Wildan Mustofa and his spouse, Atieq Mustikaningtyas, at their wet mill in the renowned Frinsa Estate. Wildan and Atieq began their coffee journey in 2010 in the Sindangkerta–Weninggalih region, laying the foundations for what would become Java Frinsa Estate. From the outset, their commitment to quality set them apart: while many Indonesian producers continued using traditional wet-hulled methods—even in the specialty sector—Wildan and Atieq focused on producing fully washed coffees with exceptional clarity. Frinsa Estate sits in West Java, locally known as Sunda, at an elevation of 1,400 masl. The estate integrates a wet mill, well-ventilated storage, and a dry mill, allowing complete control over every stage of production—from harvesting to grading, sorting, and export preparation. In collaboration with a local coffee research centre, Frinsa Estate has also invested heavily in cultivating a range of lesser-known varieties. These are organised into dedicated farm blocks, and because both the estate and many of the trees are relatively young, their flavour profiles are still being discovered. Beyond their own harvests, Wildan and Atieq process coffee for neighbouring smallholders, often organising lots by region. This initiative not only provides social and economic support to the community but also contributes to long-term environmental sustainability through water-conservation practices and reforestation efforts.
