This exceptional lot is composed of Ethiopian local heirlooms and marks our first collaboration with the Banko Chelchele community. Situated in the Gedeb woreda of the Gedeo Zone, within Ethiopia’s Southern Nations, Nationalities, and Peoples Region, this area is renowned for its ideal climate and elevation, ranging from 1,900 to 2,300 meters above sea level. The community’s deep-rooted coffee heritage and meticulous cultivation practices contribute to the exceptional quality of this coffee. The natural processing method employed involves drying the whole cherries under the sun for 2 to 4 weeks, with regular turning to ensure even drying. After reaching the desired moisture level, the cherries undergo a resting period in cool storage, allowing the flavours to develop. Subsequently, the dried cherries are hulled and milled to reveal the green beans, ready for roasting. The cup profile is outstanding: vibrant notes of raspberry, lychee, and rose water, delivering an exceptionally sweet and bright cup with layered berry and tropical acidity. This natural is a standout example of the unique flavours that Ethiopian heirlooms can offer.
