The Salaverria family, led by José Antonio Salaverria and his sons Andrés and José Antonio Jr., is one of El Salvador’s most respected coffee-growing families. With six generations of coffee cultivation rooted in Huachapan, their legacy dates back long before they became renowned for producing exceptional coffees. The family’s farms are situated around the base of the Santa Ana volcano, one of the most fertile regions for coffee in El Salvador. Their coffee is processed at Beneficio Las Cruces, a central mill the family acquired in 1990 and has steadily developed into a state-of-the-art facility, ensuring quality and consistency with every batch. The Salaverria family’s coffee comes from three primary areas—Santa Rita, San Francisco, and El Molino—and they are widely admired for their innovative approach to both cultivation and processing. In 2011, the family introduced a comprehensive quality programme, which focuses on lot separation based on altitude, growing conditions, and the potential quality of each harvest. Their farms are divided into smaller blocks, called tablones, each treated individually and experimented upon to optimise flavour. A key part of their innovation involves experimenting with various processing methods, including fermentation and soaking, to bring out the distinct qualities of each lot. The family cultivates a variety of coffee types, with a focus on Bourbon Elite and the hybrid Híbrido San Francisco—a cross between Bourbon Elite and Pacas—which has become their signature variety. They also grow the Kenyan Batian varietal, which is rare in El Salvador but brings a unique complexity to their offerings.
