What to expect in the cup

Blackberry, plum, dark chocolate. Perfectly balanced cup filled with sticky floral molasses sweetness and dense acidity of dates and purple stone fruits.

This micro-lot is made up of 100% Bourbon varietal. Apolonio has been growing at his tiny 8 hectares farm Caturra and Lempira, but only since recent years he’s planted Bourbon due to the potential for better cup quality. This is the first lot of Bourbon coming out from El Picacho and it is processed natural by slow drying on Apolonio’s new parabolic dryers. It’s our first time working with Apolonio after trying many Honduran coffees and this lot really shone in the cup with it’s juicy and beautiful floral character.
Apolonio’s farm, El Picacho is technically located across Intibuca and Montecillos regions. The two regions border each other and the Masaguara municipality runs across both growing regions. Initially, Apolonio built houses and with his earnings, he invested in his own farm, before establishing his farm he worked with other farmers. He has 8 hectares of land and grows Red Caturra and Lempira, and recently he started growing Bourbon too. When he heard from neighbours that they were getting a higher price for their coffee he began to get involved in the program for these producers. He invested in his farm by building a parabolic dryer and improving his warehouse. He also invested in training on improving the quality of his coffees and started to only pick the ripe cherry.
